Ingredients
1 lb. thin-sliced boneless chicken breast (or chicken tenders)
1 egg, beaten
shredded parmesan cheese (enough to coat the chicken)
1-2 tomatoes, medium diced
½ brown onion, sliced
Italian seasoning (2-3 shakes)
2 cloves of garlic, minced
salt and pepper to taste
fresh basil, chopped
2 Tablespoons olive oil
Instructions
Add 1T. to a medium frying pan and heat on medium. Add the garlic and onions to the pan and sauté stirring frequently to prevent burning garlic.
Add chopped tomatoes, Italian seasoning and salt and pepper and cook just 2-3 minutes. Remove from heat and cover.
While sauce cooks, place beaten egg in a shallow dish and shredded parmesan in another shallow dish. Add salt and pepper to cheese and mix in dish. Heat 1 T. oil in another frying pan on medium heat.
Dip chicken in the egg mixture and then into shredded cheese to coat. Place chicken in fry pan and cook approximately 3-5 minutes per side, depending on thickness of chicken.
When done, place on a serving platter. Add the sauce and garnish with fresh basil. Enjoy!
