Four Berry Muffins

This is one of my favorite recipes from my well-loved Ina Garten cookbook, Barefoot Contessa At Home. I use a mix of whatever berries I have available and these easy muffins turn out delicious every time.

Ingredients

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1-1/2 tablespoons ground cinnamon
  • 1-1/4 cups milk
  • 2 extra-large eggs, lightly beaten
  • 1/2 pound (2 sticks) unsalted butter, melted
  • 2 cups of fresh berries (any combination of blueberries, raspberries, strawberries and blackberries)
  • 1-1/2 cups sugar

Instructions

Preheat the oven to 375 degrees.  Line muffin tins with paper liners.

Sift the flour, baking powder, baking soda, salt, and cinnamon together in a large bowl.  In another bowl, combine the milk, eggs, and melted butter.  Make a well in the middle of the dry mixture, pour the wet mixture into the well, and stir until just combined.  There will be some lumps but don’t overmix the batter!  Add the berries (cut up strawberries if using) and sugar and stir gently to combine. Spoon the batter into the muffin cups to fill the liners.  Bake for 20 to 25 minutes, until a cake tester comes out clean and the tops are nicely browned.

Makes 18 mouth watering muffins!

Date Coconut Mixed Seed Bites

Treat yourself to these crowd-pleasing guilt free goodies when you are craving something sweet. Clean eating doesn’t mean you have to skip dessert.

Raw Date, Coconut, & Mixed Seed Fiber Power Bites | Makes 12-13 Bites – Serving size 2 Bites

Ingredients

  • 1 Cup pitted dates
  • ½ Cup of Tahini Paste
  • ½ Tablespoon chia seeds
  • ½ Tablespoon pumpkin seeds
  • ½ Tablespoon sunflower seeds
  • Unsweetened, dried shredded coconut (to cover outside of bites)

Directions

  1. Place dates and tahini into the bowl of food processor. Pulse ingredients gently until a paste-like batter is formed (this may take 1-5 minutes).
  2. Add chia seeds, pumpkin seeds, and sunflower seeds. Gently pulse mixture to incorporate, but do not blend completely (pieces of the seeds should still be visible and will provide texture to the finished product).
  3. Remove mixture from mixing bowl, and using your hand, gently shape mixture into 1 oz. size balls.
  4. Place coconut on a plate or flat surface, and gently roll the ball in coconut to cover exterior.

Package in an airtight container.

Enjoy!

Mini Blueberry, White Peach & Goat’s Cheese Galettes (a lower sugar recipe) + GBBO 2015

I can’t wait to try this! It looks fabulous and I bet, tastes even better.

This easy to make, light as a feather spelt pie crust dough is the perfect beginner's baking recipe. Filled with blueberries, peaches and complementing goat's cheese make it sophisticated enough for company too. Apologies for non-UK readers. I’m going to gush a bit about something you won’t have seen. Recipe below! Plus SPOILER ALERT!!

‘I’m never gonna put boundaries on myself ever again. I’m never gonna say “I can’t do it”. I’m never gonna say “maybe”. I’m never gonna say “I don’t think I can”. I can and I will.’ Nadiya Hussein’s rousing response to winning the 2015 Great British Bake Off

Over 12 million people tuned in to see Nadiya storm the GBBO final in her usual soft yet steely fashion. But the creme de la creme (or the “creme pat”, if you will) was her astonishing response. Astonishing in a good way. It was the best acceptance speech I’ve ever heard (take note Hollywood: the city, not the grumpy, silver-fox GBBO judge).
