Arroz Con Pollo in a Dutch Oven

Ingredients

For chicken:

2 lbs. boneless skinless chicken thighs
3 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
½ teaspoon dried Greek oregano

For dish:
¼ cup extra virgin olive oil
½ stick unsalted butter
1 medium onion, small dice
2 garlic cloves, minced
1 1/2 cups long grain rice like Mahatma brand
2 tablespoons tomato paste
3 cups low sodium chicken broth
1-2 tablespoons capers, rinsed
½ cup pitted green olives
½ cup roasted red pepper strips

Salt and pepper to taste

Optional garnish: chopped cilantro or parsley leaves

Preparation

Put chicken thighs in a nonreactive bowl and season with a pinch of salt, a grind or two of black pepper and the olive oil, red wine vinegar and oregano. Let marinate while you’re organizing the rest of your ingredients, no more than half an hour.

Melt butter with olive oil in a Dutch oven or large lid pot then sauté onion over medium heat until it begins to soften. Add the garlic and cook just until you can smell its characteristic aroma and it turns opaque. Add the rice and stir well so the grains are coated with the fat. Let it sauté for a minute. Add the tomato paste and the broth. Stir well to mix. Add the remaining condiments. Taste the liquid. It should have a piquancy from the capers and olives. Add salt now if you think you need it.

Nestle the chicken thighs into the rice, adding any reserved marinade or juices. Bring the liquid to a simmer, cover the pot and cook either on top of the stove over low heat or in a 350 degree oven for about 40 minutes or until rice has absorbed all the liquid and chicken is cooked through. Taste for seasoning.

Garnish with chopped cilantro or parsley leaves.

Serves 4-6.

Easy Herbed Cauliflower Rice

Easy Herbed Cauliflower Rice

Yield: 8-10 one-cup servings

Ingredients

  • 1 large head of cauliflower
  • 1 tbsp ghee (or butter)
  • 1 tbsp olive oil
  • 1/2 cup fine diced yellow onion
  • 3/4 tsp sea salt
  • 1-2 tsp minced  fresh parsley (or 1/2 tsp if dried)
  • 2 cloves of garlic (or 1/2 tsp garlic powder)
  • 1/4 tsp fresh ground black pepper
  • 1/3 cup vegetable or chicken stock
  • 1-2 tbsp minced fresh parsley (optional)

Instructions

  1. Cut the cauliflower into florets, and then use a food processor to pulse the florets into rice-like grains.*  Set riced cauliflower aside.
  2. Meanwhile, in a large skillet over medium heat, add the ghee, olive oil and onion. Sauté onion until it begins to soften. Then, add the salt, dried parsley, garlic powder and pepper. Stir well to combine the seasonings with the onion. Continue to cook onion another 1-2 minutes until soft and translucent.
  3. Add the riced cauliflower to the seasoned onion and stir well to combine. Continue stirring and sautéing the cauli-rice until it begins to soften (about 5 minutes).
  4. Add the chicken stock and cover the skillet. Allow the cauli-rice to steam for about 5 minutes until the stock is absorbed and the cauli-rice reaches desired texture.
  5. Remove cover, add the minced fresh parsley (optional) and fluff cauli-rice to combine.
  6. Serve alongside your favorite healthy meals.

Recipe Variation: By changing the herbs in this recipe, you can create customized cauli-rice to complement you main dish. For example, substitute minced fresh cilantro for the fresh parsley and add about 1/4 tsp cumin and 1/4 tsp chili powder to create a delicious Mexi-Style Cauli-Rice.

* Psst!  You can process a head of cauliflower into rice up to 3-4 days in advance. Store the uncooked cauli-rice in an airtight container in the fridge until ready to cook. Cooked rice should also be stored in an airtight container in the fridge and generally tastes great for up to 2-3 days. My favorite store, Trader Joe’s offers a real time saving option – cauliflower rice in a nice little bag in the refrigerator section.  Saves time and clean up!

Quick Herbed Quinoa

Herbed QuinoaWhen I first started making this side dish, I used white Basmati rice instead of quinoa.  Recently I tried using quinoa due to the great health benefits that quinoa offers.  Although it is eaten like a grain, it is technically a seed.  It is a great source of protein, something that is rare in the plant world.  Quinoa is also high in iron and calcium as well as fiber.  Quinoa is also naturally gluten-free, making it a great option for those with celiac and others needing a gluten-free diet.  Oh, did I mention it’s tasty too?

Quick Herbed Quinoa

1 cup quinoa ( I like tri-color)

1/2 tsp. salt

1 tsp. fresh rosemary, minced (1/2 tsp. if dried rosemary)

1/2 tsp. marjoram

1 tsp fresh thyme, minced (1/2 tsp. if dried thyme)

1 tsp. onion flakes

1 1/2 cups chicken broth (or vegetable broth if you are a vegetarian)

1 T. butter
