This is an easy quick bread that is a staple at our house during the holidays.   The hard part is letting it fully cool before slicing as the delicious aroma has everyone in the family sneaking into the kitchen to grab a taste.  Let them indulge.  After all, it is the holidays.

 

Mom’s Holiday Cranberry Bread

1 ¼ cups cranberries (halved)
½ cup walnuts (chopped)
2 cups flour (sifted)
1 cup sugar
1 ½ tsp. baking powder
½ tsp. baking soda
1 tsp. salt
1/4 cup shortening or butter (softened)
1 egg (well beaten)
1 tsp. grated orange peel
¾ cup orange juice

These buttery delicious crescent rolls are requested every year around the holidays by everyone in the family.  My daughters look forward to baking them with my mom every Thanksgiving.  They are irresistible right out of the oven.  Yummy!

Best Vegetable Chili Ever

Vegetable Chili

Ingredients

1/2 cup olive oil
2 zucchini, cut into ½ inch dice
2 onions, cut into ½ inch dice
4 cloves garlic, finely chopped
2 large bell peppers, cored and cut into ¼ inch dice (I like to use one red and one yellow)
1 large can Italian plum tomatoes, w/ juice
1 ½ lbs. ripe tomatoes, cut into 1-inch dice
2 T chili powder
1 T ground cumin
1 T dried basil
1 T dried oregano
2 tsp. freshly ground black pepper
1 tsp. salt
1 tsp. fennel seeds
½ cup fresh Italian (flat leaf) parsley, chopped
1 can canned dark red kidney beans, drained
1 can canned chick-peas (garbanzos), drained
½ cup fresh dill, chopped
2 T fresh lemon juice
1/2 cup sour cream
1 cup Monterey Jack Cheese, grated
4 scallions (green onions), white bulb & 3  inches green, sliced diagonally

Tomato, Basil and Mozzarella Pops

1 dry pint (basket) of cherry tomatoes
1 carton of fresh mozzarella cheese (small balls or you can cut up larger ones)
10-20 fresh basil leaves (depending on size)
good quality extra virgin olive oil
good quality balsamic vinegar
salt and pepper to taste

Tasty Grilled Vegetables

Grilled Vegetables

You can use any combination of vegetables below to whip up a super easy, tasty, healthy, and colorful  side dish for any meal.  

2 zucchinis, sliced lengthwise into 1/4-1/2 inch slices
2 peppers (red and green), seeds removed and sliced lengthwise into 1-2 inch wide slices
1 large onion sliced into ¾ -1 inch rounds
1 large portabella mushroom sliced ½ inch thick

In a measuring cup, add approx. ¼ cup olive oil and 2-3 cloves of finely minced garlic. Mix and set aside.

Place sliced veggies in a shallow pan (8X8) and drizzle with oil mixture. Gently toss. (You can also brush vegetables with a pasty brush generously dipped in oil and garlic mixture if you’d like).

 

Place on a medium grill and cook until slightly charred and softened.

 

Remove from heat and place on platter and serve.  Yummy!

Mom’s Macaroni and Cheese

½ cup butter (divided)
4 T. flour
1 tsp. salt
¼ tsp. pepper
2 cups milk
1 ½ cups cheddar cheese (shredded or cut into ½ inch cubes)
1 tsp Worcestershire sauce
1 ¼ tsp. prepared mustard
1 T. onion (chopped)
8 saltine crackers (crushed)
2 cups elbow macaroni (cooked and drained)

Bean and Kale Minestra

Serves 6 to 8

½ pound kale (about 4 cups, chopped—we used lacinato)
4 large garlic cloves, minced
olive oil to coat the bottom of your soup pot
6 cups cooked (2 cups dry) cannellini (white kidney beans—we used navy beans)
4 to 5 cups bean water, vegetable or chicken stock or water
2 heaping tablespoons tomato paste
6 fresh sage leaves (½ tsp  if dry)
1 tsp salt (or to taste)
freshly ground pepper
½ cup finely ground cornmeal
2 tablespoons fresh lemon juice (or to taste)
freshly grated Parmesan cheese
